Sweet Corn is divided into 4 Catagories, and all four Catagories can be found in the different colors. The first is the standard or SU corn. Corns belonging to this category have high amounts of sugar which converts to starch within hours of harvest. The second category is the SE or sugary enhanced variety. These corns will retain their sweetness for several days after harvest. The third category, the sh2s, hold their sweetness for a week or more. The fourth category is the Triplesweet or Synergistic varieties, which are a cross between the se varieties and the sh2 varieties. These display the best characteristics of both these categories.
