Horseradish roots have been used for thousands of years, but did you know that the leaves are also edible? When the roots are ground or grated, volatile oils are released. The spicy flavor is the result of the oils reacting with the air or saliva. Vinegar will stop that reaction.

Horseradish is available from mid-March through April 30.
